Matalon was chairman of the MultiCare Foundation from its inception in 1993 until March 2008 when he was appointed chairman emeritus.
A distinguished industrialist and leading philanthropist, Matalon spearheaded the establishment of the MultiCare Foundation with his family, and their ICD Group Limited conglomerate, in partnership with Caribbean Cement Company Limited, and Cable & Wireless Jamaica Limited.
"Dr Matalon was the founder, conceptualiser and believer of the MultiCare Foundation," said Judith Bruce, MultiCare director and niece of Matalon.
Chairman of the MultiCare Foundation, Compton Rodney, hailed the late benefactor as "an extraordinary human being" whose vision inspired others.
"The establishment of the MultiCare Foundation is a testament to his love for Jamaica and its young people in particular. Characterised by his compassion and understanding, Dr Matalon's dynamic, sensitive charm made him a popular personality with people from all walks of life," said Rodney.
Matalon, who was awarded the Order of Jamaica - the island's fourth-highest honour - died on Saturday in Miami, Florida, after a short illness. He was 89. He leaves behind wife Marjorie, son Joseph A. Matalon and daughters, Barbara Henriquez and Janet Carvalho.
A traditional Jewish thanksgiving service was held on Monday.
