Sacha's potato salad

Being given the task of whipping up the potato salad for our section dinner was my pleasure. While potato salad is yummy, I would not say the dish is my favourite from the Christmas Day menu; that title would have to go to ham. However, to some of my team members' disappointment, the ham plans fell through. Though the ham was missed, our feast turned out to be quite good. Enjoy my potato salad.

Ingredients

4 large Irish potatoes

2 tbsp mayonnaise

1 tbsp margarine

Salt and black pepper to taste

1 small carrot diced

1/2 small sweet pepper

2 eggs boiled

1 cup of corn

Method

Peel and cut potatoes into cubes. Boil the potatoes and egg in salt water until potatoes are tender and eggs are hard boiled. Allow potatoes and eggs to cool.

Remove egg shell and yolk. Dice whites into small pieces. Add mayonnaise, margarine, diced carrot, green sweet pepper, corn and black pepper to potatoes and stir. Garnish a bowl with lettuce and scoop salad into bowl. Chill overnight and serve.

Sweet potato

This will be easy to come by this week in most markets and vegetable shops across the island.

Markets such as May Pen and Spanish Town, will ask $50 for a pound of sweet potato. The same price will be quoted in downtown Kingston. Montego Bay's Charles Gordon Market will also ask $50 per pound .

Salad Tomatoes

Salad Tomatoes are also easy to come by this week. If you are shopping for the vegetable in Montego Bay's Charles Gordon Market, the asking price will be $50 per pound. Most rural retail markets will quote prices ranging from $50 to $60, and the same prices will be quoted in downtown Kingston.

Green Gungo

Very popular for Christmas, it is easy to find across the island. Most rural retail markets will ask prices ranging from $60 to $70 for a pound of unshelled gungo.

Montego Bay's Charles Gordon Market will ask $80, while in downtown Kingston, the asking price will be $60 to $70 per pound.

Sorrel

If you haven't purchased sorrel for Christmas, you will be glad to know that it is fairly easy to come by this week. Montego Bay's Charles Gordon Market is asking $140 for a pound of sorrel, while most rural retail markets are asking $80 to $100. In downtown Kingston, the price range is $60 to $100 this week.

Sweet Pepper

This week, the asking price in downtown Kingston for a pound of sweet pepper is $80. In May Pen the asking price is $70 to $80 per pound.

Scallion

This is currently on good offer across the island. Downtown Kingston's less expensive locations are asking prices ranging from $80 to $100 per pound. The same prices will be quoted in Montego Bay's Charles Gordon Market.
