I make every dish attractive - such as colourful napkins or table settings. I sit quietly and eat, relishing and loving every morsel. If you are a diabetic and prepare your food well, new tastes develop. The joy of really tasting what you eat makes up for all the sauces, salt and sugars.
BREAKFAST
One egg or a little piece of mackerel, or ackee and saltfish.
Three crackers, or one slice of toasted bread with a half of teaspoon of butter.
A cup of coffee. An orange or a half of cup of fresh orange juice.
LUNCH
Three ounces of seafood, meat or poultry.
Two and half ounces of one of these - yam, breadfruit, sweet potato or half cup or rice, or two small green bananas.
Cooked or raw vegetables - the green ones are the best, red and yellows should be avoided. Callaloo, okra, chocho.
Beans in moderation.
For dessert a half of a ripe banana, or a fruit cup filled with fresh fruits. La Bella Italia Sugar Free Ice Cream is a blessing.
SUPPER
More of the above, changing the menu could include a salad with avocado, pieces of meat, fish, shellfish such as shrimp, etc.
A cup of milk a day is allowed, so you can have this with your tea or coffee, or drink those black and have the milk before going to bed.
SNACKS
Cheese
Whole wheat crackers (not many)
Olives
Celery
Small green salads
Cucumber and chocho sticks.
At least eight glasses of water per day.
Dian's Steamed Snapper
Method
1. Season the fish with lime juice, garlic, black pepper, lots of thyme, onions, scallion chopped up.
2. In a skillet sauté the vegetables - okra, chocho, string beans, little carrots for colour with all the seasonings from the fish with a touch of olive oil.
3. Add half cup water.
4. Add the fish, using the sauce to baste. Cover and allow to steam for 20 minutes, depending on the size of the fish. I like a small quarter pound whole fish.
To plate:
Place the fish in the middle of a plate of your choice. Add the steamed vegetables. Callaloo, a slice of sweet potato and a small side salad can be accompaniments.
For dessert: Half of a banana with one scoop of La Bella diabetic ice cream or have a yoghurt with two tablespoons of fresh fruit salad. No sugar.
