High cholesterol

THE FOODS we eat influence the levels of serum cholesterol and lipoproteins. Cholesterol is a waxy substance that is a part of the cell walls in animal cells. Since it is waxy, it is not easily dissolved in the blood and transported to the cells. Its transport system is therefore lipoproteins. Low-density lipoprotein (LDL), associated with atherosclerosis, delivers cholesterol and fat to the walls of the arteries while high-density lipoproteins (HDL) seems to carry these substances away from the artery walls. To protect yourself from cardiovascular diseases (CVD) keep the LDL under control. LDL is increased by eating foods rich in saturated fats such as milk, cheese, ice cream and red and processed meats. To lower LDL eat foods rich in polyunsaturated and monounsatured fats such as peanuts, olive oil, fish and avocados.
